Abstract
In recent years, the American public has been confronted with considerable advertising on the part of the large coffee merchants with regard to the reputed harmful effects of the caffein contained in coffee. The attitude taken against this constituent of coffee, was of course, determined by the form of coffee sold by the respective merchants, those handling the ordinary form stressing the importance of correct brewing in preventing any nervous disorders or loss of sleep, and those selling the decaffeinized brand blaming the caffein as the cause. There is considerable disagreement between authorities on this question,since most knowledge of the chemistry of coffee is comparatively new. Tn 1895, Fischer and Ach, determined the exact composition of caffein by synthesis. Since that time numerous investigators have studied coffee, but the conclusions reached have been, to some extent, mostly personal opinions, and often contradictory.
